December 24...358/365

I was feeling stressed and guilty about the fact that our Christmas Eve meal wasn't prepared BEFORE we left for church.  But everyone pitched in and we ended up all cooking together and having a great evening!

November 21...325/365

Classic case of trying to do too many things at once resulted in a complete disaster of my kitchen...yes, I poured a glass of wine (pictured) before attempting to clean up--this is only a small corner of my mess.  Good news is that the Thanksgiving rolls are ready to brown and serve now!!

October 6...279/365

After school today things were really peaceful for some reason.  I had soup on the stove and Millie helped me make pumpkin apple muffins for dinner.  Then we sat on the couch and read together.  I'm not sure why we can't do this every day, but I was thankful for it today!!

Apple Pumpkin Muffins
2 ½ cups all-purpose flour
2 cups sugar
1 Tblspn. Pumpkin pie spice
1 tsp. baking soda
½ tsp. salt
2 eggs
1 cup canned pumpkin
½ cup vegetable oil
2 cups finely chopped peeled apples
STREUSEL:
¼ cup sugar
2 Tblspn. All-purpose flour
½ tsp. ground cinnamon
4 tsp. cold butter or margarine
In a bowl, combine the first five ingredients.  In another bowl, combine the eggs, pumpkin and oil; stir into dry ingredients just until moistened.  Fold in apples.  Fill paper-lined muffin cups two-thirds full.  In a small bowl, combine sugar, flour and cinnamon.  Cut in butter until crumbly.  Sprinkle over batter.  Bake at 350 degrees for 35-40 minutes or until golden brown.  Cool for 5 minutes before removing from pans to wire racks.  Makes 1 ½ dozen.

September 7...250/365

If you're squeamish, just stop now and look at the next post!

I cleaned out the fridge today.  This poor bag fell behind a shelf and was found under a drawer.  Not good...really makes me feel sick to look at it.  But it's my only picture from today.

June 10...191/365

This is one of our very favorite dinners...and a recipe I can't share because I made it up and it changes every time. I saute veggies (whatever we have or whatever sounds good), and then add cooked pasta and let it start to brown a little bit. Then I add cream and white wine and let it thicken just a bit...top with grilled chicken. Delicious!!

A new French Toast bake that Matt is trying.
Side note...this is my very first post from my new computer! Got all of my pics moved over and I'm figuring out how to keep my photos organized and upload them from iPhoto--so far so good.

May 18...138/365

For a little over two years now, Matt & I have enjoyed cooking together and have taken on increasingly difficult recipes. This Friday for our anniversary Matt is taking the day off work and the two of us are attempting Julia's Boeuf Bourguignon.

My table at our church's Women's Candlelight Dinner. My theme (for those who don't regularly play preschool games) is CandyLand.

April 14...104/365

Found a yummy recipe that the kids love for after-school snack. The tortilla is spread with Nutella and wrapped around a banana. Then fried in just a tiny bit of olive oil in a skillet. YUM...

March 29...88/365

I've been dreaming of trying this ever since I first saw Julie & Julia. It was as delicious as I imagined.

Hubby has gone a little crazy...my homemade mocha. It was pretty delicious.
